What will you need?

  • 4 Chicken Legs (Galiña)

  • 1 lime

  • 2 tbsp of salt

  • 3 tbsp of oil

  • 2 tbsp of butter or margarine

  • 1 tbsp of sugar

  • 1 tsp of garlic powder

  • 1 onion, finely chopped

  • 1 tomato chopped

  • 1 clove garlic chopped

  • 1 cube chicken broth

  • 1/2 tsp ground cumin

  • 1 tsp curry powder

  • 1 tsp compete seasoning

  • 1 tsp dried oregano

  • 1 tbsp soy sauce sweet

  • 1 tbsp soy sauce salt

  • 1 tbsp of tomato paste

  • 1 cup of water

How to prepare this Bonairean recipe?

Remove the skin of the chicken, rinse it thoroughly in water with lime and salt and dry it with paper towels, then cut it into pieces.

In a bowl, mix all spices and soy sauce and rub the chicken pieces with it, then let it marinate for about 30 minutes.

Meanwhile, heat butter and oil in a wok or pan, and when it is warm add the sugar and the garlic powder. Put the chicken pieces and the marinade into the pan and fry the chicken over medium high heat.

When the chicken is brown, add the onion, tomato and tomato paste.

Cover the pan and simmer over low heat, after 15 minutes stir the mixture, add water if necessary. The total timing of simmer should be around 30 to 40 minutes.

Serve the chicken stew with the side dish you like the best, on Bonaire we love it with funchi and fried banana, or with rice and salad ;)
